The Four Seasons Resort’s Roti Canai Recipe

If you’ve ever stayed at a Four Seasons Resort you’ll know what its like to fight off the guilty pangs of never wanting to leave the luxury of your perfectly curated purlieu. You know there is a wonderful world outside of the resort but the temptations of everything that lies before you – the pure comfort of your room, the exotic set up of the pool, beach or ski area; and of course the spa—oh my, the spa! You just can’t help but wanting to stay at the resort all day long. I know that was the case when I stayed at the Four Seasons Resort in Costa Rica.

And last but not least, the resort expertly seduces its guests with an array of scrumptious, local-inspired culinary delights.  Pure seduction at every turn. Here is a recipe from the Four Seasons Resort in Langkawi, Malaysia – a local favorite: Roti Canai, a type of Indian-influenced flatbread found in Malaysia, Singapore and Indonesia typically served with curry dishes.

ROTI CANAI – Serves 2
Four Seasons Resort Langkawi, Malaysia

Ingredients:

  • 300g cake flour
  • 5g salt
  • 25g sugar
  • 15g margarine
  • 
25g evaporated milk
  • 15g condensed milk
  • 
135g water
  • Cooking oil

Method:

  1. Mix flour, salt, sugar, condense milk and water.
  2. Combine the dough mixture and roll into ball shape about 80gm each.
  3. Coating the ball shape dough with margarine and leave it rest for at least four hours.
  4. Use cooking oil to flatten the dough and shape into square. Pan fried the square dough.
  5. Good to serve with curry, dhall or any sweet dip.
