Eating in season is where you will experience the best flavors of your favorite foods and that goes for one of my all time favorites – beets. We picked up a batch of local beets, and were pleasantly surprised to find they were orange instead of red beets – not that I would have minded. I love roasted beet salad with goat cheese so that’s what we made. Roasted beets, soft bib lettuce, cucumbers, honey roasted almonds and pea shoots. This was served with a simple olive oil, lemon, mustard vinaigrette. No recipe needed – just bring together these ingredients and serve. Love love love this!
While the salad was the star definitely of this meal, we love grilled baby lamb chops. They are so easy to prepare. Each chop was sprinkled with some olive oil, salt and pepper, mustard and dried rosemary. I let that stand for 10 minutes while I was preparing the salad. After grilling the chops I add a dash of mint sauce, put the dressing on the salad – and dinner is served!
