You might not be familiar with Bucatini – its a thick spaghetti-like pasta with a hole running through the center. The name comes from Italian – buco, meaning “hole”, and bucato meaning “pierced”. Proscuitto and Bucatini
Ingredients:
- 1 lb bucatini pasta
- 1/2 medium onion, chopped
- 1/4 lb prosciutto, sliced thinly & chopped
- 1/4 cup olive oil
- salt & pepper to taste
- garnish: chopped parsley, grated cheese and/or red pepper flakes
Directions:
- Make pasta according to package instructions
- Add olive oil to a large skillet over medium heat
- Add onions and sauté until translucent
- Sprinkle in chopped prosciutto, add salt & pepper to taste. Cook until pProsciutto slightly crisps
- Add the pasta to the skillet and combine well. Add pasta to individual plates
- Garnish with fresh parsley and serve immediatelhy
