And how could you go wrong with a comfort food like Proscuitto Bucatini? Unless the apple of your eye follows a gluten free diet, this dish is sure to please. You might not be familiar with Bucatini – its a thick spaghetti-like pasta with a hole running through the center. The name comes from Italian – buco, meaning “hole”, and bucato meaning “pierced”. Serve with a refreshing glass of white wine. Mangia and enjoy!

Proscuitto and Bucatini 

Ingredients:

  • 1 lb bucatini pasta
  • 1/2 medium onion, chopped
  • 1/4 lb prosciutto, sliced thinly & chopped
  • 1/4 cup olive oil
  • salt & pepper to taste
  • garnish: chopped parsley, grated cheese and/or red pepper flakes

Directions:

  1. Make pasta according to package instructions
  2. Add olive oil to a large skillet over medium heat
  3. Add onions and sauté until translucent
  4. Sprinkle in chopped prosciutto, add salt & pepper to taste. Cook until pProsciutto slightly crisps
  5. Add the pasta to the skillet and combine well. Add pasta to individual plates
  6. Garnish with fresh parsley and serve immediatelhy
