Sauces, dessert, drinks, cocktails, dressing, cookies and so much more Lemons are used for many reasons in cooking – to impart a light fresh flavor, to prevent discoloring (think apples), to tenderize meet, and to help in the digestion of food. The outer skin of the lemon, which is referred to as zest, also contains a lot of flavor and is used in sweet and savory dishes.
