french toast waffles with caramelized apples and bacon

Wake up to Tyler’s Brioche French Toast Waffles with
Caramelized Apples and Bacon. Served with a mocha cappuccino whipped up
with an immersion blender.

BRIOCHE FRENCH TOAST
Yield: serves 4
Time: 30 minutes

Ingredients

  • 4 thick slices (1-1/2 inch slices) brioche bread non-stick spray powdered sugar, for dusting French toast batter:
  • 3 eggs
  • 1/4 cup whole milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Directions

  1. Make French toast batter in a shallow dish: combine all the ingredients and whisk together.
  2. Lay pieces of brioche in the batter and flip to soak evenly.
  3. Heat up your waffle iron and spray with non-stick spray. Toast each piece, one at a time until golden brown and crispy about 3 minutes.
  4. Keep warm in the oven while you toast the rest.
  5. Serve crispy brioche French toast topped with caramelized maple apples and roasted bacon.
  6. Dust with powdered sugar.

CARAMELIZED MAPLE APPLES
Yield: serves 4
Time: 12 minutes

Ingredients

  • 2 tablespoons unsalted butter
  • 4 Granny Smith apples
  • 1/2 cup of maple syrup

Directions

  1. Peel and cut apples into small wedges.
  2. Set a large non-stick pan over medium heat and add butter. Once butter melts and foams, add apples and toss to coat.
  3. Saute until apples are just tender on the outside and start to caramelize about 10 minutes.
  4. Add maple syrup and simmer for 2 minutes until sauce is thick and syrupy.


OVEN ROASTED BACON
Yield: serves 4
Time: 15 minutes

12 rashers of Apple-wood smoked bacon

Directions

  1. Pre-heat oven to 375 degrees F.
  2. Line a cookie sheet with parchment paper and lay bacon out in a single flat layer.
  3. Roast in the oven for 15 minutes until crispy and golden brown.
  4. Remove from tray and drain on a paper towel.

HOMEMADE CAPPUCCINO
Yield: 4 cups
Time: 7 minutes

Ingredients

  • 4 rounded tablespoons of your favorite, good quality, coffee beans (use 1 rounded tablespoon of ground coffee per cup of coffee)
  • 1 tablespoon of cocoa powder
  • 2 cups of whole milk

Directions

  1. Begin by grinding fresh coffee beans in a coffee grinder and
    making your favorite espresso (if you have an espresso machine) or just
    your regular coffee.
  2. Heat the milk with cocoa powder in a medium-sized saucepan until warmed through but do not boil.
  3. Remove from heat and set on a kitchen towel on your bench top so it is on a slight angle.
  4. Set an immersion blender in the shallow end of the pot and froth
    the milk on high speed until the foam holds about 2-3 minutes blending
    on high.
  5. Divide the coffee out amongst the cups and spoon the frothed milk on top of each. Serve immediately.
