I just LOVE cheese ravioli so when a friend invited me over for a ravioli dinner I happily accepted. Goat Cheese Ravioli with Tomato Basil Sauce
Ingredients:
- 1 bag of Goat Cheese Ravioli
- 1/4 cup olive oil
- 4 cloves garlic, chopped
- 4 plum tomatoes, chopped
- salt and pepper to taste
- 1/4 cup fresh basil, chopped, reserving a few leaves for garnish
- freshly grated Parmesan cheese
Directions:
- Boil water and cook ravioli per directions, cook al dente
- In a deep skillet, heat olive oil over medium heat, saute garlic until soft
- Add tomatoes, sauté for about ten minutes until soft and a lot of liquid has released
- Add salt and pepper to taste
- Add basil and let simmer for 10 minutes
- Place four ravioli on a plate, pour sauce over the ravioli,
- Add freshly grated Parmesan cheese
- Garnish with basil leaves
