Goat Cheese Ravioli with Tomato Basil Sauce

I just LOVE cheese ravioli so when a friend invited me over for a ravioli dinner I happily accepted. She asked that I bring over some Parmesan cheese which turned out to be a good thing as I wanted to test my new Savora Rotary Cheese Grater.  I’ve experienced the sexy efficiency of rotary graters at Italian restaurants and always wanted this cool gadget for myself.  And after testing it… the Savora grater is stylish, sleek, ergonomically designed and extremely functional. Goat Cheese Ravioli with Tomato Basil Sauce

Ingredients: 

  • 1 bag of Goat Cheese Ravioli
  • 1/4 cup olive oil
  • 4 cloves garlic, chopped
  • 4 plum tomatoes, chopped
  • salt and pepper to taste
  • 1/4 cup fresh basil, chopped, reserving a few leaves for garnish
  • freshly grated Parmesan cheese

Directions: 

  1. Boil water and cook ravioli per directions, cook al dente
  2. In a deep skillet, heat olive oil over medium heat, saute garlic until soft
  3. Add tomatoes, sauté for about ten minutes until soft and a lot of liquid has released
  4. Add salt and pepper to taste
  5. Add basil and let simmer for 10 minutes
  6. Place four ravioli on a plate, pour sauce over the ravioli, 
  7. Add freshly grated Parmesan cheese
  8. Garnish with basil leaves
