Lasagna in the Raw

“My favorite seduction meal is my raw lasagna! It is alive, full of
vibrancy and makes you tingle when you eat it. When I first tried raw
food preparation, I was a bit overwhelmed at all of the preparation
that was required for some recipes, however when my friend Bonita
shared this recipe with me, I realized that I LOVE making raw meals
and they love me too, by the vibrant, healthy way they make me feel.
NOW, I seduce people to try raw by making this dish for them! They are
usually surprised and delighted when they taste how delicious it
is…and they always ask for seconds!”   Enjoy!

Raw Lasagna
Ingredients:

Raw Cashew Cheese

  • 1/2 cup Raw Cashews
  • fresh lemon juice
  • sea salt
  • 1 small jar of sun dried tomatoes in olive oil

Raw Tomato sauce

  • 1 small jar of sun dried tomatoes in olive oil. (if using bagged sun dried tomatoes, add 1 Tablespoon of olive oil)
  • 1 Roma tomato (or ½ of a regular-sized tomato)
  • 1-2 cloves of garlic (depending on your taste buds)
  • 2-4 leaves of fresh basil
  • Sea salt to taste
  • Oregano

Vegetables

  • 1 large Green Zucchini, thinly sliced lenghwise
  • 1 bag of fresh spinach, coarsely chopped

Pre-Preparation:

Raw Cashew Cheese: (needs to soak for 4 hours)
  1. Soak about ½ cup of raw cashews in a glass jar for at least 4 hours
  2. Then drain and throw in to food processor
  3. Add 1-2 good squeezes of a lemon
  4. Add ½ teaspoon of sea salt
  5. Blend until mixture is whipped up

Tips:

  • be sure to use a rubber spatula to scrape the sides of the processor bowl from time to time
  • add 1 teaspoon of water (or more) if the mixture seems dry (this will make it fluffier)

Raw Tomato sauce:

  1. Blend all ingredients in a blender until mixture is whipped up
  2. Be sure to use a rubber spatula to scrape the sides of the processor bowl from time to time
  3. Sprinkle oregano flakes on top of entire mixture to taste
Tips:

  • Optional: Add sliced red peppers over the “cheese” for an extra texture and flavor
  • This tomato sauce and Raw cheese can be used on raw pizza or raw spaghetti, too.

Preparing the Lasagna:
1st Level
  1. Slice a green zucchini the lengthwise and place the thin slices on the bottom of a rectangle glass pan
2nd Level
  1. Spread raw cashew cheese over entire zucchini “noodles”

3rd Level

  1. Sprinkle coarsely chopped spinach over entire area of pan (over cheese)
4th Level
  1. Gently spread tomato sauce mixture over entire area of pan (over spinach)
Cut up into serving slices and dig in!
