I had the most delicious, ripe mango in my hand and some left over chicken from the night before so it only seemed right to blend the two for a light summer salad. Sometimes simple is soooo good!
Mango Chicken Salad with Curried Cashews
Ingredients:
- 2 cups chicken, finely chopped
- 3 scallion bulbs, thinly sliced
- 2-3 celery stalks, thinly sliced
- 1 small mango, cubed
- 1/8 cup fresh dill, finely chopped
- 1/8 cup mayonnaise
- 3 tablespoons rice vinegar
- (Optional) a hefty handful of curry cashews or walnuts
Mix all ingredients together and add more or less mayo and rice vinegar to taste. You can serve this over a bed of baby arugula salad, with toast points, or dive in as is with a fork or spoon. A glass of white wine will only make it better ; )
