Pan Seared Salmon with Balsamic Glaze and Peach Tomato Salsa

This is one of those NO RECIPE recipes. You know the kind…. when you eat a fabulous meal whipped up by your grandmother, friend or mom and you ask for the recipe. “Oh I don’t have a recipe. It’s a pinch of this and a pinch of that”.

In this case I did get the recipe. And while its not a formal recipe – one look at this dish and you can imagine how good this would be. So, I share with you the informal recipe I gratefully received from my friend (who totally rocks in the kitchen) and let you find the right measurements for your palette.

  • Fresh Spinach, chopped & sautéed w/ diced garlic, olive oil, red pepper flakes.
  • Season topside of Salmon w/ Olive Oil (I used Orange Infused OO),  add fresh cracked salt and pepper, coat top of salmon heavily with Dill, cook in hot cast iron skillet, sear about 6-8 minutes flesh side down, covered.
  • Turn over to sear skin side 1-2 min
  • Place on dish skin side down and add a line of balsamic glaze

For Peach-Tomato Salsa: Slice ripe, fresh Peaches, Red Cherry Tomatoes, Sweet Orange Cherry Tomatoes, fresh chopped Cilantro, salt and pepper.  Drizzle all of the above w/ EVOO & Balsamic Reduction (homemade or store-bought). To spice things up a bit you can add thinly sliced jalapeno pepper.
