I just got off the phone with a close friend who asked for a special but simple recipe for Valentine’s Day. She works all day and wanted to enjoy an intimate night in so it had to be a no-fuss recipe. Easy shopping, prep and cooking. Her husband loves seafood so I suggested this dish. I thought I’d share the recipe again because it is very tasty and quite easy to make once you have the ingredients: Pumpkin Seed Crusted Salmon with Pipian Verde Sauce. Another variation of this recipe is the Artichoke Crusted Salmon with Mint Vinaigrette dish we just featured by Todd English of Olives Restaurant. Taking cues from both recipes I bet there are other ingredients that can be formulated to achieve the same type of dish. Yogurt or mayonnaise kissed with spices and flavorings keeps the salmon juicy while adding another dimension of tastes. Serve with a bottle of champagne or white wine and your favorite side dish.
