The first time I ever heard of Raspberry Fool was when I was living in London. I remember my very first taste (it was on April Fool’s Day which seem apropos) and how I craved this creamy treat at least once a week. Thank goodness I was in my twenties when eating calories didn’t seem to matter much. According to wikipedia: A fool is an English dessert. Traditionally, fruit fool is made by folding pureed stewed fruit into sweet custard. Modern fool recipes often skip the traditional custard and use whipped cream. I’ve had this prepared both ways and they are both wonderful but the traditional recipe does have more flavor.
So it seems only fair to pay a tribute to April Fool’s Day with this recipe. Just click on the title for the recipe
