Oeufs en Cocotte au Saumon Fumé / Eggs Baked with Smoked Salmon

Looking for an easy, tasty, yet light solution for dinner tonight I decided to turn things upside down and serve breakfast for dinner.  I found this recipe, created by Wolfgang Puck, a while ago on Saveur.com and tucked it in my “Recipes to Try” file and tonight’s the night! The recipe is a baked egg dish called Oeufs en Cocotte au Saumon Fumé  / Eggs Baked with Smoked Salmon.

You simply line a ramekin with slices of smoked salmon, add a bit of cream, crack an egg and add to the ramekin and bake for about 15 minutes. This simple yet elegant breakfast dish (or in my case dinner dish) is then topped with a dollop of horseradish cream and snipped chives. Served with crusty bread slathered with sweet butter.
