This morning I awoke with a craving for banana bread. Not just any banana bread. Banana bread with chocolate and walnuts. Lucky for me, I had three ripe bananas perfect for this task and all the ingredients needed. Make banana bread is pretty straightforward, and this recipe is super easy! All you need are the ingredients, a mixing bowl, a wooden spoon, and the right size baking pan. With a pot of coffee brewing in the background, and the aroma of freshly baked goods you’ll find a smile on the face of anyone stepping into your kitchen. What a great way to start the day! For this recipe, I used Ghirardelli 60% cacao bittersweet chocolate chips, and I used brown Turbinado sugar instead of white sugar. I like the slight molasses/caramel flavor it adds to the bread.

Delicious moist and tasty banana bread. Serve up a slice as is, or add a smear of cream cheese or a teaspoon of your favorite preserves.

Ingredients

  • 3 Ripe bananas

  • 1/3 cup Butter, melted

  • 1 Egg

  • 3/4 cup Sugar

  • 1 teaspoon Vanilla extract

  • 1/4 teaspoon Salt

  • 1 teaspoon Baking Soda

  • 1 1/2 cups All-purpose flour

  • 1/3 cup Chocolate Chips

  • 1/2 cup Walnuts, chopped

Directions

  • Preheat the oven to 350 F.
  • Melt the butter over the stove or in microwave
  • In a large bowl, smash the bananas (I used a potato masher)
  • Add the butter into the bowl with the mashed bananas, and mix together using a wooden spoon.
  • Mix in the egg, sugar and vanilla.
  • In a separate bowl, combine the flour, baking soda and salt. Gradually add to creamed mixture until moistened. Tip: mix just enough to blend the ingredients; do not over mix.
  • Add walnuts and chocolate chips to the batter and mix until evenly distributed.
  • Butter a 8.5” x 4.5” bread loaf pan.
  • Line the bottom of the pan with parchment paper, butter the parchment paper.
  • Pour the batter in the pan.
  • Bake for 1 hour or until a toothpick inserted in the center comes out clean.
  • Remove from oven and let cool for 5 – 10 minutes (I like to serve my banana bread warm, so 5 minutes is good for me).
  • Remove from pan, slice and serve.
