The drumsticks and breast soak in a tenderizing brine of honey, lemon, herbs, garlic, and lots of salt before roasting – while thighs are deboned and stuffed with an herbed turkey mousse for roulades – oh la la! And to spice things up, how about a roast turkey with toasted ancho chili, garlic and scallion rubbed turkey breast or turkey in a mole poblano sauce.
